Method
- Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
- Pat the cod fillets dry and place them in a single layer in the baking dish.
- In a bowl mix olive oil, garlic, lemon juice, parsley, thyme, salt, and pepper.
- Brush the lemon herb mixture evenly over the cod fillets.
- Place lemon slices on top of each fillet and sprinkle paprika if using.
- Bake for 12–15 minutes until the fish flakes easily with a fork.
- Garnish with extra parsley and serve with fresh lemon wedges.
Notes
Avoid overcooking cod. Remove from the oven as soon as it flakes easily to keep the fish tender and moist.
