Ingredients
  

Main Chicken
  • 1 whole chicken about 3-4 lbs
  • 3 tbsp unsalted butter softened
  • 2 tbsp olive oil
  • 5 cloves garlic minced
  • 2 lemons 1 sliced, 1 juiced
  • 1 tbsp fresh thyme
  • 1 tbsp fresh rosemary
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika optional
Vegetables
  • 1 onion quartered
  • 2 carrots chopped
  • 2 celery stalks chopped

Equipment

  • roasting pan

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken dry with paper towels.
  3. Mix butter, olive oil, garlic, lemon juice, herbs, salt, pepper, and paprika.
  4. Rub mixture under and over chicken skin.
  5. Stuff cavity with onion and lemon slices.
  6. Place chicken in roasting pan with vegetables.
  7. Roast for 60-75 minutes until internal temperature reaches 165°F.
  8. Rest chicken for 10-15 minutes before carving.

Notes

Baste chicken once or twice during cooking for extra flavor and moisture.
