Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 6 cups chicken broth
Main Ingredients
  • 2 cups cooked chicken shredded
  • 3/4 cup orzo pasta
Seasoning & Finish
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 2 lemons juiced
  • 1 lemon zest
  • salt to taste
  • black pepper to taste
  • 2 tbsp fresh parsley chopped

Method
 

  1. Heat olive oil in a large pot over medium heat and sauté onion, carrots, and celery until softened.
  2. Add garlic and herbs, cook briefly, then pour in chicken broth and bring to a boil.
  3. Add orzo and cook until tender, then stir in chicken, lemon juice, zest, and parsley before serving.

Notes

Add lemon juice at the end for the brightest flavor. For meal prep, store orzo separately to avoid sogginess.
