Ingredients
  

Pasta Base
  • 12 oz linguine or fettuccine
  • 2 tbsp olive oil
  • 4 cloves garlic thinly sliced
  • 2 pints cherry tomatoes
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1 lemon zested and juiced
  • 1/3 cup reserved pasta water
  • 1/2 cup parmesan cheese grated
  • 1 large ball burrata cheese
  • 1 cup fresh basil leaves torn
Optional Garnishes
  • extra parmesan cheese
  • lemon wedges

Equipment

Method
 

  1. Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve pasta water before draining.
  2. Heat olive oil in a large skillet and sauté garlic until fragrant.
  3. Add cherry tomatoes, salt, pepper, and red pepper flakes. Cook until tomatoes blister and burst.
  4. Stir in lemon zest and juice.
  5. Add cooked pasta and reserved pasta water to the skillet. Toss until glossy.
  6. Mix in parmesan cheese until melted.
  7. Tear burrata over the pasta and garnish with fresh basil before serving.

Notes

Use ripe cherry tomatoes and room-temperature burrata for the best texture and flavor.
