Ingredients
  

Meatballs
  • 250 g ground beef
  • 250 g ground chicken or pork
  • 1/2 cup breadcrumbs
  • 1/4 cup Parmesan cheese grated
  • 1 egg
  • 2 cloves garlic minced
  • 2 tbsp parsley chopped
Soup Base
  • 1 tbsp olive oil
  • 1 onion finely chopped
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 8 cups chicken broth
  • 1 cup small pasta
  • 3 cups spinach or escarole chopped
  • 1/4 cup Parmesan cheese for garnish

Method
 

  1. Mix all meatball ingredients and form small meatballs.
  2. Sauté onion, carrots, celery, and garlic in olive oil until softened.
  3. Add broth and meatballs, simmer until meatballs are cooked through.
  4. Add pasta and cook until tender, then stir in greens until wilted.
  5. Season to taste and serve with grated Parmesan.

Notes

Use fresh herbs and high-quality broth for the best flavor. Add pasta just before serving to maintain texture.
