Ingredients
  

Chicken Marinade
  • 4 boneless skinless chicken thighs
  • 2 cups buttermilk
  • 2 tbsp hot sauce
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
Crispy Coating
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch for extra crispiness
  • 1 tsp cayenne pepper
  • 1 tsp onion powder
Hot Honey Sauce
  • 1/2 cup honey
  • 1 tbsp butter
  • 1 tsp red pepper flakes
Assembly
  • 4 brioche buns lightly toasted
  • 1 cup coleslaw
  • 12 pickle slices

Method
 

  1. Whisk together buttermilk, hot sauce, garlic powder, paprika, salt, and pepper. Marinate chicken thighs for at least 2 hours.
  2. Combine flour, cornstarch, cayenne, onion powder, garlic powder, paprika, salt, and pepper in a shallow bowl.
  3. Dredge chicken in flour mixture, dip briefly back into marinade, then coat again for extra crispiness.
  4. Heat oil to 350°F and fry chicken until golden brown and cooked through.
  5. Warm honey, butter, hot sauce, and pepper flakes in a saucepan until glossy.
  6. Toast brioche buns lightly in butter.
  7. Assemble sandwiches with slaw, crispy chicken, hot honey drizzle, and pickles.

Notes

For maximum crunch, let the coated chicken rest for 10 minutes before frying.
