Ingredients
  

Dough
  • 4 cups all-purpose flour
  • 2.25 tsp active dry yeast
  • 0.5 cup sugar
  • 1 cup warm milk
  • 0.25 cup butter softened
  • 2 eggs
  • 1 tsp salt
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 1 tbsp orange zest
  • 0.75 cup raisins
Cross Paste
  • 0.5 cup flour
  • 6 tbsp water
Glaze
  • 2 tbsp apricot jam
  • 1 tbsp water

Method
 

  1. Activate yeast in warm milk and sugar until frothy.
  2. Mix dry ingredients and combine with yeast mixture, eggs, and butter to form dough.
  3. Knead until smooth, then mix in raisins and zest.
  4. Let dough rise until doubled in size.
  5. Shape into buns and allow a second rise.
  6. Pipe crosses and bake until golden.
  7. Brush with glaze and cool before serving.

Notes

For extra softness, brush buns with butter immediately after baking.
