- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare all vegetables by peeling and chopping into evenly sized pieces.
- Place vegetables into a large mixing bowl.
- In a separate bowl, whisk together olive oil, honey, garlic, thyme, salt, and pepper.
- Pour the glaze over vegetables and toss until evenly coated.
- Spread vegetables in a single layer on the baking sheet.
- Roast for 35–40 minutes, stirring halfway through.
- Remove from oven once vegetables are tender and caramelized.
- Serve warm with fresh herbs if desired.
Notes
Swap honey for maple syrup to make this recipe vegan. Add rosemary or balsamic glaze for flavor variation.
