- Season chicken breasts with salt and pepper and cook in a skillet over medium heat for about 5–6 minutes per side until fully cooked.
- Allow the chicken to rest for 5 minutes, then slice into thin strips.
- Whisk together honey, Dijon mustard, olive oil, lemon juice, apple cider vinegar, salt, and pepper to create the dressing.
- In a large bowl combine lettuce, cherry tomatoes, cucumber, shredded carrots, and red onion.
- Add sliced chicken on top and drizzle with honey mustard dressing.
- Toss gently and serve immediately.
Notes
For extra flavor marinate the chicken in a tablespoon of honey mustard dressing before cooking. Store leftover dressing in the refrigerator for up to one week.
