Ingredients
  

Salad Base
  • 2 chicken breasts grilled and sliced
  • 6 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1 cup shredded carrots
  • 1/4 red onion thinly sliced
Honey Mustard Dressing
  • 3 tbsp honey
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp apple cider vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Season chicken breasts with salt and pepper and cook in a skillet over medium heat for about 5–6 minutes per side until fully cooked.
  2. Allow the chicken to rest for 5 minutes, then slice into thin strips.
  3. Whisk together honey, Dijon mustard, olive oil, lemon juice, apple cider vinegar, salt, and pepper to create the dressing.
  4. In a large bowl combine lettuce, cherry tomatoes, cucumber, shredded carrots, and red onion.
  5. Add sliced chicken on top and drizzle with honey mustard dressing.
  6. Toss gently and serve immediately.

Notes

For extra flavor marinate the chicken in a tablespoon of honey mustard dressing before cooking. Store leftover dressing in the refrigerator for up to one week.
