Ingredients
  

Chicken Marinade
  • 2 chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lime juice fresh
  • 1 tbsp honey
  • 2 cloves garlic minced
Salad Base
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 0.5 red onion sliced
Dressing
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard

Method
 

  1. Whisk marinade ingredients and coat chicken, then marinate for 20 minutes.
  2. Cook chicken in skillet until fully cooked, then rest and slice.
  3. Combine salad ingredients, add chicken, drizzle dressing, and toss before serving.

Notes

For extra flavor, marinate chicken longer and add fresh herbs before serving.
