Ingredients
  

Granola Base
  • 3 cups rolled oats
  • 1 cup sliced almonds
  • 1/2 cup honey
  • 1/4 cup coconut oil melted
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
Optional Mix-Ins
  • 1/2 cup dried cranberries
  • 1/2 cup raisins
  • 1/4 cup pumpkin seeds

Method
 

  1. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large bowl combine rolled oats, almonds, cinnamon, and salt.
  3. Whisk honey, melted coconut oil, brown sugar, and vanilla in a small bowl.
  4. Pour the honey mixture over the oats and stir until evenly coated.
  5. Spread the mixture evenly on the baking sheet and press lightly.
  6. Bake for 20–25 minutes, stirring once halfway through, until golden brown.
  7. Allow the granola to cool completely to form crunchy clusters.
  8. Add optional dried fruit or seeds and store in an airtight container.

Notes

For extra crunchy clusters, press the granola firmly onto the baking sheet and avoid stirring during the final cooling stage.
