Ingredients
  

Main Component
  • 1 cup couscous
  • 1 cup vegetable broth or water
  • 2 tbsp olive oil
Flavoring
  • 1 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 1 clove garlic minced
  • 1/4 cup parsley chopped
  • 2 tbsp mint chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Bring broth to a boil, then remove from heat and stir in couscous.
  2. Cover and let sit for 5 minutes, then fluff with a fork.
  3. Mix with olive oil, lemon juice, garlic, herbs, and seasoning, then serve.

Notes

Use fresh herbs for best flavor and fluff couscous gently to avoid clumping.
