Method
- Preheat oven to 200°C (400°F).
- Mix butter with garlic, herbs, salt, and pepper.
- Pat chicken dry and rub herb butter under and over the skin.
- Stuff cavity with lemon and onion.
- Place chicken on vegetables in roasting pan.
- Roast for 75–90 minutes, basting halfway through.
- Rest for 10–15 minutes before carving and serving.
Notes
For extra crispiness, leave the chicken uncovered in the fridge for a few hours before roasting.
