Ingredients
  

Main Component
  • 1 whole chicken 1.5–2 kg
  • 100 g unsalted butter softened
  • 4 cloves garlic minced
  • 1 tbsp rosemary chopped
  • 1 tbsp thyme
  • 1 tbsp parsley chopped
  • 1 lemon halved
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
Optional Vegetables
  • 1 onion quartered
  • 2 carrots chopped
  • 2 potatoes cubed

Equipment

Method
 

  1. Preheat oven to 200°C (400°F).
  2. Mix butter with garlic, herbs, salt, and pepper.
  3. Pat chicken dry and rub herb butter under and over the skin.
  4. Stuff cavity with lemon and onion.
  5. Place chicken on vegetables in roasting pan.
  6. Roast for 75–90 minutes, basting halfway through.
  7. Rest for 10–15 minutes before carving and serving.

Notes

For extra crispiness, leave the chicken uncovered in the fridge for a few hours before roasting.
