Ingredients
  

Grilled Shrimp
  • 1 lb large shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 lime lime juice freshly squeezed
Mango Salsa
  • 2 mangoes diced
  • 1/4 cup red onion finely diced
  • 1 jalapeño minced
  • 1/4 cup cilantro chopped
Bowl Assembly
  • 3 cups cooked rice
  • 2 avocados sliced
  • 1 cup red cabbage shredded
  • 1 cup cucumber diced

Method
 

  1. Marinate shrimp with olive oil, lime juice, and seasonings for 15 minutes.
  2. Mix mango salsa ingredients together and chill.
  3. Grill shrimp 2–3 minutes per side until cooked through.
  4. Divide rice among bowls and arrange vegetables and avocado.
  5. Top with grilled shrimp and mango salsa.
  6. Garnish with cilantro and serve with lime wedges.

Notes

For maximum flavor, grill shrimp over high heat and use freshly squeezed lime juice throughout the recipe.
