- Whisk together BBQ sauce, soy sauce, brown sugar, pineapple juice, garlic, ginger, lime juice, smoked paprika, and black pepper in a large bowl.
- Add chicken chunks to the marinade and refrigerate for at least 1 hour.
- Thread chicken, pineapple, peppers, and onion onto skewers.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Grill skewers for 10–14 minutes, turning occasionally until chicken reaches 165°F.
- Brush with extra BBQ sauce during the last few minutes of cooking.
- Rest briefly, garnish as desired, and serve warm.
Notes
Fresh pineapple gives the best caramelized flavor and texture on the grill.
