Ingredients
  

Chicken Marinade
  • 2 pounds boneless skinless chicken thighs cut into chunks
  • 1 cup BBQ sauce
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons pineapple juice
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
Skewers
  • 2 cups fresh pineapple chunks
  • 1 large red bell pepper cut into squares
  • 1 large green bell pepper cut into squares
  • 1 large red onion cut into chunks
  • 8 wooden skewers soaked in water

Method
 

  1. Whisk together BBQ sauce, soy sauce, brown sugar, pineapple juice, garlic, ginger, lime juice, smoked paprika, and black pepper in a large bowl.
  2. Add chicken chunks to the marinade and refrigerate for at least 1 hour.
  3. Thread chicken, pineapple, peppers, and onion onto skewers.
  4. Preheat the grill to medium-high heat and lightly oil the grates.
  5. Grill skewers for 10–14 minutes, turning occasionally until chicken reaches 165°F.
  6. Brush with extra BBQ sauce during the last few minutes of cooking.
  7. Rest briefly, garnish as desired, and serve warm.

Notes

Fresh pineapple gives the best caramelized flavor and texture on the grill.
