Ingredients
  

Roast Beef
  • 3 lb halal beef roast top round or sirloin
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tbsp Dijon mustard
Vegetables
  • 4 carrots peeled
  • 1 lb baby potatoes
  • 1 onion quartered

Method
 

  1. Remove the beef from the refrigerator 30 minutes before cooking and pat dry.
  2. Mix seasonings with olive oil and garlic, then rub all over the beef.
  3. Place vegetables in the roasting pan and arrange the roast on top.
  4. Roast at 425°F for 15 minutes, then reduce to 325°F and continue cooking for 60 minutes.
  5. Rest the roast for 15 minutes before slicing and serving.

Notes

For best results, use a meat thermometer and slice against the grain.
