Method
- Remove the beef from the refrigerator 30 minutes before cooking and pat dry.
- Mix seasonings with olive oil and garlic, then rub all over the beef.
- Place vegetables in the roasting pan and arrange the roast on top.
- Roast at 425°F for 15 minutes, then reduce to 325°F and continue cooking for 60 minutes.
- Rest the roast for 15 minutes before slicing and serving.
Notes
For best results, use a meat thermometer and slice against the grain.
