Ingredients
  

Short Ribs
  • 4 lb beef short ribs bone-in preferred
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 large yellow onion diced
  • 2 large carrots chopped
  • 2 stalks celery chopped
  • 6 cloves garlic minced
  • 2 tbsp tomato paste
  • 14 oz Guinness stout
  • 3 cups beef stock
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 2 bay leaves
Garnish
  • 2 tbsp fresh parsley chopped

Equipment

Method
 

  1. Season and lightly flour the short ribs.
  2. Sear the ribs until deeply browned on all sides.
  3. Cook vegetables and tomato paste in the Dutch oven.
  4. Deglaze with Guinness stout and simmer briefly.
  5. Add stock, herbs, and return ribs to the pot.
  6. Cover and braise at 325°F for 3 to 3½ hours.
  7. Reduce sauce if desired and serve over mashed potatoes.

Notes

For best flavor, prepare one day ahead and reheat gently before serving.
