  • 1 lb large shrimp peeled and deveined
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 lemon zest from 1 lemon
  • 1 lemon juice freshly squeezed
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.25 tsp red pepper flakes optional

  • 2 tbsp fresh parsley chopped

Method
 

  1. Pat shrimp dry and set aside.
  2. Mix olive oil, garlic, lemon zest, lemon juice, and spices to create marinade.
  3. Toss shrimp in marinade and rest for 15-20 minutes.
  4. Thread shrimp onto skewers.
  5. Grill on medium-high heat for 2-3 minutes per side.
  6. Garnish with parsley and serve with lemon wedges.

Notes

Do not overcook shrimp; they should be pink and slightly firm. Marinate briefly to avoid mushy texture.
