Ingredients
  

Main Salad
  • 4 ears corn husked
  • 1 cup cherry tomatoes halved
  • 1/2 red onion finely diced
  • 1/2 cup cilantro chopped
  • 1 avocado diced
  • 1 jalapeño optional, chopped
Dressing
  • 2 tbsp olive oil
  • 1 tbsp lime juice fresh
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • salt to taste
  • black pepper to taste

Method
 

  1. Preheat grill to medium-high heat.
  2. Grill corn for 8–10 minutes, turning until lightly charred.
  3. Cut kernels off the cob and place in a bowl.
  4. Add tomatoes, onion, cilantro, avocado, and jalapeño.
  5. Whisk dressing ingredients together and pour over salad.
  6. Toss gently, adjust seasoning, and serve.

Notes

For best flavor, allow salad to chill briefly before serving and add avocado last.
