Ingredients
  

Chicken
  • 2 lb boneless skinless chicken cut into cubes
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 4 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
Optional Garnish
  • 1 tbsp fresh parsley chopped
  • 1 lemon cut into wedges

Method
 

  1. Cut the chicken into even cubes and place in a mixing bowl.
  2. Combine olive oil, lemon juice, garlic, and seasonings, then coat the chicken and marinate for at least 30 minutes.
  3. Thread the chicken onto skewers and grill over medium-high heat for 10 to 12 minutes, turning occasionally.
  4. Rest for 5 minutes, garnish with parsley, and serve warm.

Notes

For extra juicy skewers, use chicken thighs instead of chicken breast and avoid overcooking.
