Greek Chicken Bowl

A healthy Mediterranean-inspired bowl with grilled lemon herb chicken, fresh vegetables, rice, and creamy tzatziki.

Ingredients
  

Chicken Marinade
  • 2 chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic minced
  • 1 tsp oregano
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Bowl Base
  • 2 cups cooked rice
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 0.5 red onion sliced
  • 0.5 cup Kalamata olives
  • 0.5 cup feta cheese crumbled
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic grated
  • 0.5 cucumber grated and drained
  • 1 tbsp dill
  • 1 pinch salt and pepper

Equipment

  • Mixing bowls
  • Grill pan or skillet
  • Knife
  • Cutting board

Method
 

  1. Mix marinade ingredients and coat chicken. Marinate 30 minutes.
  2. Cook chicken in skillet 5–7 minutes per side until done.
  3. Rest chicken then slice into strips.
  4. Mix tzatziki sauce ingredients and chill.
  5. Divide rice into bowls and top with vegetables and chicken.
  6. Add tzatziki, garnish, and serve.
