Ingredients
  

French Toast Base
  • 1 loaf brioche bread cubed
  • 6 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/3 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
Peach Layer
  • 5 fresh peaches sliced
  • 1/3 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
Cobbler Crumble
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 6 tablespoons cold butter cubed

Equipment

  • 9x13 baking dish

Method
 

  1. Grease a 9x13-inch baking dish.
  2. Layer half the bread cubes, peaches, and remaining bread.
  3. Whisk custard ingredients and pour over bread.
  4. Cover and refrigerate for at least 4 hours or overnight.
  5. Prepare crumble topping and refrigerate.
  6. Top casserole with crumble and bake at 350°F for 45-50 minutes.
  7. Cool for 10 minutes and serve warm.

Notes

For best results, use day-old brioche bread and ripe but firm peaches.
