Main Ingredients
  • 20 large mushrooms stems removed
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup breadcrumbs panko preferred
  • 120 g cream cheese softened
  • 1/3 cup parmesan cheese grated
  • 1/4 cup onion finely chopped
  • 2 tbsp parsley chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
Optional Additions
  • 1/2 cup cooked sausage crumbled

Method
 

  1. Preheat oven to 190°C (375°F) and prepare a baking dish.
  2. Remove mushroom stems, chop them finely, and set aside.
  3. Sauté onion, garlic, and chopped stems in olive oil until soft.
  4. Mix sautéed ingredients with cream cheese, breadcrumbs, parmesan, and seasoning.
  5. Stuff mushroom caps and arrange in baking dish.
  6. Bake for 18–22 minutes until golden and tender.

Notes

For extra crispiness, broil for 2 minutes at the end.
