Main Ingredients
  • 1 kg carrots peeled
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • 1 tbsp honey optional
  • 1 tsp salt
  • 0.5 tsp black pepper
Optional Additions
  • 1 tbsp parsley chopped
  • 1 tsp lemon juice

Method
 

  1. Preheat oven to 200°C and line a baking sheet.
  2. Toss carrots with olive oil, garlic, salt, pepper, and honey.
  3. Spread on baking sheet and roast for 25–30 minutes, flipping halfway.

Notes

For best flavor, roast at high heat and avoid overcrowding the pan.
