Ingredients
  

Soup Base
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 onion chopped
  • 6 cloves garlic minced
  • 4 cups potatoes peeled and diced
  • 4 cups broth vegetable or chicken
  • 1 cup heavy cream
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 0.5 tsp thyme optional
  • 0.25 tsp smoked paprika optional

Method
 

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add onion and cook until softened.
  3. Stir in garlic and cook until fragrant.
  4. Add potatoes and broth, then bring to a simmer.
  5. Cook until potatoes are tender.
  6. Blend the soup until smooth.
  7. Stir in cream and seasonings, then simmer briefly.
  8. Serve hot with garnish of choice.

Notes

For a vegan version, use plant-based milk and oil instead of butter.
