Ingredients
  

Chicken Skewers
  • 2 lb boneless skinless chicken breast cut into cubes
  • 4 cloves garlic minced
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh oregano chopped
  • 1 tsp fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
Optional Garnish
  • 2 tbsp fresh parsley chopped
  • 1 lemon cut into wedges

Method
 

  1. Cut chicken breasts into evenly sized cubes.
  2. Whisk together olive oil, garlic, lemon juice, herbs, and spices to make the marinade.
  3. Toss chicken in the marinade and refrigerate for at least 30 minutes.
  4. Thread marinated chicken onto skewers.
  5. Preheat grill to medium-high heat.
  6. Grill skewers for 10-12 minutes turning frequently until chicken reaches 165°F.
  7. Remove from grill, rest briefly, garnish with parsley and serve.

Notes

Marinate chicken up to 4 hours for deeper flavor. Serve with pita bread, rice, or Mediterranean salad.
