- Cut chicken breasts into evenly sized cubes.
- Whisk together olive oil, garlic, lemon juice, herbs, and spices to make the marinade.
- Toss chicken in the marinade and refrigerate for at least 30 minutes.
- Thread marinated chicken onto skewers.
- Preheat grill to medium-high heat.
- Grill skewers for 10-12 minutes turning frequently until chicken reaches 165°F.
- Remove from grill, rest briefly, garnish with parsley and serve.
Notes
