Ingredients
  

Aioli Base
  • 2 cloves garlic finely minced
  • 1 egg yolk
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice fresh
  • 3/4 cup light olive oil
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
Optional
  • 1 teaspoon water for thinning

Equipment

Method
 

  1. Mince the garlic into a fine paste.
  2. Whisk together garlic, egg yolk, mustard, lemon juice, salt, and pepper.
  3. Slowly drizzle in olive oil while whisking constantly until thick and creamy.
  4. Adjust consistency with water if needed.
  5. Refrigerate briefly before serving.

Notes

For milder flavor, roast the garlic before mixing into the aioli.
