French Onion Soup (Halal)

A rich and comforting halal French onion soup topped with toasted bread and melted cheese.

Ingredients
  

Soup Base
  • 4 large yellow onions thinly sliced
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp all-purpose flour
  • 6 cups halal beef broth
  • 1 cup water
  • 1 tsp thyme leaves
  • 2 bay leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp balsamic vinegar
Topping
  • 1 small baguette sliced
  • 2 cups Gruyère cheese shredded halal

Equipment

  • large stockpot
  • Wooden spoon
  • oven-safe soup bowls

Method
 

  1. Thinly slice the onions.
  2. Cook onions in butter and olive oil over medium heat for 35 to 45 minutes until deeply caramelized.
  3. Add garlic and cook for 1 minute.
  4. Stir in flour and cook for 2 minutes.
  5. Add broth, water, thyme, bay leaves, salt, pepper, and balsamic vinegar.
  6. Simmer for 20 minutes.
  7. Toast baguette slices until golden.
  8. Ladle soup into oven-safe bowls and top with bread and cheese.
  9. Broil until cheese is melted and golden.

Notes

For the richest flavor, take your time caramelizing the onions slowly without rushing.
