Ingredients
  

Pancake Batter
  • 1 cup cottage cheese
  • 2 ripe bananas mashed
  • 2 eggs large
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 tbsp milk or as needed
  • 1 tbsp butter or oil for cooking

Method
 

  1. Mash bananas in a large bowl until smooth.
  2. Add cottage cheese, eggs, vanilla, and milk; whisk until combined.
  3. Whisk flour, baking powder, baking soda, salt, and cinnamon in a separate bowl.
  4. Combine wet and dry ingredients gently without overmixing.
  5. Heat skillet over medium heat and grease lightly.
  6. Pour 1/4 cup batter per pancake and cook until bubbles form.
  7. Flip and cook until golden brown on both sides.
  8. Serve warm with maple syrup and toppings of choice.

Notes

Use very ripe bananas for best sweetness and flavor. Batter should be thick but scoopable.
