Ingredients
  

Egg Mixture
  • 4 large eggs
  • 2 tbsp milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
Sandwich Assembly
  • 4 slices sandwich bread toasted
  • 2 slices cheddar cheese
  • 2 tbsp butter
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp chopped chives optional

Method
 

  1. Whisk eggs, milk, salt, and pepper together in a bowl until smooth.
  2. Melt butter in a skillet over medium-low heat and gently cook the eggs until soft and fluffy.
  3. Toast the bread slices until golden brown.
  4. Spread mayonnaise and mustard on the toasted bread.
  5. Add cheese slices and divide the eggs evenly between the sandwiches.
  6. Garnish with chives, close the sandwiches, and serve warm.

Notes

For extra flavor, add sliced tomato, avocado, or turkey bacon.
