Ingredients
  

Biscuit Base
  • 250 g digestive biscuits crushed
  • 120 g unsalted butter melted
Cheesecake Filling
  • 600 g cream cheese softened
  • 120 g powdered sugar
  • 1 tsp vanilla extract
  • 300 ml heavy whipping cream
Caramel Layer
  • 300 g caramel sauce or dulce de leche
Chocolate Topping
  • 200 g milk chocolate chopped
  • 2 tbsp heavy cream

Method
 

  1. Combine crushed biscuits with melted butter and press into a springform pan. Chill for 30 minutes.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream.
  3. Spread filling over crust and chill for 2 hours.
  4. Spread caramel evenly over cheesecake and chill for 30 minutes.
  5. Make chocolate topping by combining warm cream with chocolate until smooth.
  6. Pour chocolate over caramel layer and refrigerate for at least 4 hours or overnight.
  7. Slice and serve chilled.

Notes

For the cleanest slices, chill overnight and use a warm knife.
