Ingredients
  

Rice Base
  • 2 cups long-grain white rice rinsed
  • 3 tbsp olive oil
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 8 oz tomato sauce
  • 4 cups chicken broth
Seasonings & Garnish
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh cilantro chopped
  • 1 lime cut into wedges

Equipment

Method
 

  1. Rinse rice thoroughly and drain well.
  2. Toast rice in olive oil until lightly golden.
  3. Cook onion and garlic until fragrant.
  4. Add tomato sauce, broth, cumin, salt, and pepper.
  5. Bring to a boil, cover, and simmer for 20 minutes.
  6. Rest covered for 10 minutes.
  7. Fluff with a fork, stir in cilantro, and serve.

Notes

For the fluffiest texture, avoid lifting the lid during cooking and allow the rice to rest before fluffing.
