Ingredients
  

Pasta Base
  • 300 g pasta fettuccine, penne, or linguine
Creamy Tuscan Sauce
  • 250 g fresh mushrooms sliced
  • 2 cups fresh spinach
  • 4 garlic cloves minced
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp Italian seasoning
  • salt and black pepper to taste
  • red pepper flakes optional
  • fresh parsley optional garnish

Equipment

  • Large skillet
  • pasta pot
  • Wooden spoon

Method
 

  1. Cook pasta in salted boiling water until al dente, then reserve pasta water and drain.
  2. Sauté mushrooms in olive oil and butter until golden and browned.
  3. Add garlic and Italian seasoning, cooking briefly until fragrant.
  4. Pour in cream and simmer gently until slightly thickened.
  5. Stir in parmesan and spinach until melted and combined.
  6. Toss pasta into sauce, adjust seasoning, and serve warm.

Notes

For best results, brown mushrooms properly and avoid boiling the cream sauce.
