Ingredients
  

Egg Base
  • 6 large eggs
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp white vinegar
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp smoked paprika plus extra for garnish
Garnish
  • 1 tbsp fresh chives finely chopped

Method
 

  1. Place eggs in a saucepan, cover with cold water, and bring to a boil.
  2. Turn off the heat, cover, and let eggs sit for 10 to 12 minutes.
  3. Transfer eggs to ice water and cool for 10 minutes.
  4. Peel the eggs and slice each one lengthwise.
  5. Remove yolks and mash with mayonnaise, mustard, vinegar, salt, pepper, and paprika.
  6. Pipe or spoon the filling into egg whites.
  7. Garnish with paprika and chives before serving.

Notes

For the smoothest filling, press the yolks through a fine mesh sieve before mixing.
