Dressing

  • 2 tbsp vinegar red wine or apple cider
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp parsley chopped

Method
 

  1. Slice cucumbers and chop tomatoes into bite-sized pieces.
  2. Thinly slice red onion and soak briefly in water if desired.
  3. Combine vegetables in a bowl.
  4. Whisk together olive oil, vinegar, salt, and pepper.
  5. Pour dressing over salad and toss gently.
  6. Add parsley and serve immediately or chill briefly.
