Ingredients
  

Chicken
  • 2 lb boneless skinless chicken breasts cut into strips
  • 1 cup dill pickle juice for marinade
  • 1/2 cup dill pickles finely chopped
  • 1 tbsp fresh dill chopped
Coating
  • 2 large eggs beaten
  • 1 tbsp Dijon mustard
  • 1 cup Parmesan cheese grated
  • 1 1/2 cups panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried dill
  • 1/2 tsp paprika

Method
 

  1. Marinate chicken in pickle juice, chopped pickles, and dill for at least 30 minutes.
  2. Preheat oven to 425°F and prepare coating stations.
  3. Coat marinated chicken in egg mixture, then Parmesan breadcrumb mixture.
  4. Bake for 20–25 minutes until golden and cooked through.
  5. Garnish with fresh dill and Parmesan before serving.

Notes

For maximum crunch, finish under the broiler for 2 minutes and serve immediately.
