  • 1.5 lbs baby potatoes
  • 3 tbsp olive oil
  • 2 tbsp butter melted
Seasoning
  • 3 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp oregano or thyme
  • fresh parsley for garnish
  • flaky sea salt for finishing

Method
 

  1. Boil potatoes in salted water until fork-tender, about 15–20 minutes.
  2. Drain and allow potatoes to dry slightly before placing on a baking sheet.
  3. Smash each potato gently, drizzle with oil and butter, season, and roast at 425°F for 25–30 minutes until crispy.

Notes

For extra crispiness, ensure potatoes are dry before roasting and do not overcrowd the pan.
