Ingredients

  • 6 russet potatoes medium size
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
Toppings
  • 1.5 cups shredded cheddar cheese
  • 1 cup halal beef cooked and crispy
  • 0.5 cup sour cream
  • 3 green onions chopped

Method
 

  1. Preheat oven to 200°C (400°F) and bake pierced potatoes for 45–50 minutes until tender.
  2. Cool slightly, cut in half, and scoop out most of the flesh leaving a thin layer.
  3. Brush with oil, season, and bake skin-side up for 10 minutes, then flip and bake 10 more minutes.
  4. Fill with cheese and beef, then bake 5–7 minutes until melted and bubbly.
  5. Top with sour cream and green onions, then serve hot.

Notes

For extra crispiness, broil for 1–2 minutes before serving.
