Ingredients
  

Crispy Fish
  • 500 g white fish fillets cod or tilapia
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp baking powder
  • 1 tsp paprika
  • 1 cup cold sparkling water
Taco Assembly
  • 8 tortillas
  • 2 cups shredded cabbage
  • 1/4 cup cilantro chopped
Creamy Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lime juice

Equipment

  • deep skillet or pot
  • Mixing bowl
  • Tongs

Method
 

  1. Mix dry batter ingredients and whisk in cold sparkling water until smooth.
  2. Heat oil to 180°C and fry battered fish pieces until golden and crispy.
  3. Assemble tacos with fish, cabbage, cilantro, and sauce, then serve with lime wedges.

Notes

For extra crispiness, keep the batter cold and fry in small batches.
