Ingredients
  

Crepe Batter
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tbsp melted butter
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
Optional Toppings
  • powdered sugar
  • fresh berries

Method
 

  1. Whisk together flour, sugar, and salt in a mixing bowl.
  2. Add eggs, milk, melted butter, and vanilla extract, then whisk until smooth.
  3. Let the batter rest for 15 to 20 minutes.
  4. Heat a lightly buttered nonstick skillet over medium heat.
  5. Pour 1/4 cup batter into the pan and swirl quickly into a thin circle.
  6. Cook 30 to 45 seconds, flip, then cook another 15 to 20 seconds.
  7. Fill with desired toppings, fold, and serve warm.

Notes

For extra smooth batter, blend the ingredients for 15 seconds before resting.
