Creamy Tzatziki Sauce

Ingredients
  

Tzatziki Base
  • 1.5 cups Greek yogurt thick full-fat preferred
  • 1 medium cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tbsp lemon juice fresh
  • 1 tbsp olive oil extra virgin
  • 1 tbsp fresh dill chopped
  • 0.25 tsp salt
  • 0.25 tsp black pepper
Optional Additions
  • 1 tsp red wine vinegar
  • 1 tbsp fresh mint chopped

Equipment

  • Mixing bowl
  • box grater
  • spoon or spatula

Method
 

  1. Grate the cucumber using a box grater and squeeze out excess liquid using a clean towel.
  2. In a mixing bowl combine Greek yogurt, lemon juice, and olive oil until smooth.
  3. Add minced garlic, grated cucumber, dill, salt, and pepper and stir until fully combined.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to develop.
  5. Stir before serving and garnish with olive oil and fresh herbs.

Notes

For thicker tzatziki, strain the yogurt through cheesecloth before mixing. Always remove as much moisture from the cucumber as possible.
