  • 4 salmon fillets
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • 1/2 cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • salt and pepper to taste

Method
 

  1. Season salmon with salt and pepper.
  2. Sear salmon in olive oil until golden and cooked through, then remove.
  3. Sauté garlic in butter, then add broth, cream, parmesan, and seasoning.
  4. Stir in sun-dried tomatoes and spinach until wilted.
  5. Return salmon to the pan and simmer briefly before serving.

Notes

Use fresh parmesan and avoid overheating the sauce to maintain a smooth creamy texture.
