Ingredients
  

Main Ingredients
  • 2 chicken breasts boneless, skinless
  • 300 g pasta penne or fettuccine
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 1 cup spinach fresh
  • 0.5 cup sun-dried tomatoes chopped
  • 1 tsp Italian seasoning
  • 0.5 tsp red pepper flakes optional
  • salt and pepper to taste
  • 1 tbsp butter
  • 0.5 cup chicken broth

Equipment

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve some pasta water and drain.
  2. Season and sear chicken in olive oil until fully cooked, then slice.
  3. In the same skillet, melt butter and sauté garlic.
  4. Add chicken broth, cream, parmesan, sun-dried tomatoes, and spices. Simmer until thickened.
  5. Add spinach and cook until wilted.
  6. Return pasta and chicken to skillet and toss to coat.
  7. Adjust seasoning, add pasta water if needed, and serve hot.

Notes

Add a splash of lemon juice to brighten the creamy sauce if desired.
