Method
- Cook pasta in salted boiling water until al dente. Reserve some pasta water and drain.
- Season and sear chicken in olive oil until fully cooked, then slice.
- In the same skillet, melt butter and sauté garlic.
- Add chicken broth, cream, parmesan, sun-dried tomatoes, and spices. Simmer until thickened.
- Add spinach and cook until wilted.
- Return pasta and chicken to skillet and toss to coat.
- Adjust seasoning, add pasta water if needed, and serve hot.
Notes
Add a splash of lemon juice to brighten the creamy sauce if desired.
