Ingredients
  

Main Ingredients
  • 500 g cheese tortellini
  • 2 tbsp olive oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 2 cups crushed tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese grated
Seasoning & Finish
  • 1 tsp oregano
  • 1/2 tsp red pepper flakes optional
  • salt to taste
  • black pepper to taste
  • 1/2 cup fresh basil chopped

Equipment

  • Skillet
  • Wooden spoon

Method
 

  1. Cook tortellini in salted boiling water according to package instructions. Reserve pasta water and drain.
  2. Heat olive oil in a skillet and sauté onion until soft, then add garlic and cook briefly.
  3. Add crushed tomatoes and seasonings, simmer for 10 minutes, then stir in cream and parmesan.
  4. Add cooked tortellini to the sauce and toss to coat evenly.
  5. Finish with fresh basil and serve hot with extra parmesan.

Notes

Use fresh basil for best flavor and adjust sauce consistency with reserved pasta water.
