- Cook tortellini in salted boiling water according to package instructions. Reserve pasta water and drain.
- Heat olive oil in a skillet and sauté onion until soft, then add garlic and cook briefly.
- Add crushed tomatoes and seasonings, simmer for 10 minutes, then stir in cream and parmesan.
- Add cooked tortellini to the sauce and toss to coat evenly.
- Finish with fresh basil and serve hot with extra parmesan.
