Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1.5 kg tomatoes fresh or canned
  • 2 cups vegetable broth
  • 0.5 cup fresh basil chopped
Seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp oregano
  • 1 tsp sugar optional
Finishing
  • 0.5 cup heavy cream
  • 2 tbsp butter

Equipment

  • Large pot
  • Blender or immersion blender
  • Knife
  • Cutting board

Method
 

  1. Heat olive oil in a large pot and sauté onion until soft.
  2. Add garlic and cook until fragrant.
  3. Add tomatoes and cook for 10 minutes.
  4. Pour in broth and seasonings, simmer for 20 minutes.
  5. Add basil and blend soup until smooth.
  6. Stir in cream and butter, simmer for 5 minutes.
  7. Adjust seasoning and serve warm.

Notes

Use fresh basil for best flavor and adjust cream for desired richness.
