Ingredients
  

Main Ingredients
  • 300 g pasta
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 250 g mushrooms sliced
  • 150 g spinach
Sauce
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Cook pasta in salted boiling water until al dente, reserve pasta water and drain.
  2. Sauté mushrooms in olive oil and butter until golden, then add garlic and cook briefly.
  3. Add spinach, pour in cream, stir in parmesan and seasoning, then toss with pasta and serve.

Notes

Use fresh parmesan for best texture and add pasta water gradually for a silky sauce.
