Method
- Cook pasta in salted boiling water until al dente, reserve pasta water and drain.
- Sauté mushrooms in olive oil and butter until golden, then add garlic and cook briefly.
- Add spinach, pour in cream, stir in parmesan and seasoning, then toss with pasta and serve.
Notes
Use fresh parmesan for best texture and add pasta water gradually for a silky sauce.
