Ingredients
  

Pasta
  • 12 oz pasta penne or rigatoni
  • 2 tbsp olive oil
  • 1/2 onion chopped
  • 3 cloves garlic minced
Red Pepper Cream Sauce
  • 3 roasted red peppers
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes optional

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water before draining.
  2. Sauté onion in olive oil until soft, then add garlic and cook briefly.
  3. Blend roasted red peppers, sautéed onion, garlic, cream, and seasonings until smooth.
  4. Pour sauce into skillet and simmer gently for 5 minutes.
  5. Stir in parmesan cheese until melted and creamy.
  6. Add cooked pasta to the sauce and toss to coat evenly.
  7. Serve warm with fresh basil and extra parmesan.

Notes

Add grilled chicken, shrimp, or spinach to make the dish more filling. Use fresh roasted peppers for deeper flavor.
