  • 1.5 kg potatoes peeled and cubed
  • 4 eggs hard-boiled
  • 1 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar

  • 1/2 cup celery chopped
  • 1/3 cup red onion diced
  • 2 tbsp parsley chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Method
 

  1. Boil potatoes in salted water until fork-tender, then drain and cool slightly.
  2. Prepare dressing by whisking mayonnaise, mustard, vinegar, and spices.
