Ingredients
  

Main Soup Base
  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1.5 lbs carrots peeled and chopped
  • 4 cups vegetable broth
  • 1 tsp salt
  • 0.5 tsp black pepper
Finishing Touch
  • 0.5 cup heavy cream or coconut milk
  • 0.5 lemon juiced

Method
 

  1. Heat olive oil in a saucepan and sauté onion until soft, then add garlic and ginger.
  2. Add carrots and cook briefly before pouring in vegetable broth and seasoning.
  3. Simmer until carrots are tender, blend until smooth, then stir in cream and lemon juice before serving.

Notes

For a vegan version, substitute heavy cream with coconut milk. Roast carrots beforehand for deeper flavor.
