Ingredients
  

Main Soup Base
  • 4 cups broccoli florets chopped small
  • 1 carrot finely shredded
  • 1 onion diced
  • 3 cloves garlic minced
  • 4 tbsp butter
  • 1/4 cup flour
  • 2 cups vegetable broth
  • 2 cups milk
  • 2 cups cheddar cheese freshly grated
Seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika optional

Method
 

  1. Melt butter in a large pot and sauté onion until soft, then add garlic.
  2. Whisk in flour and cook briefly to form a roux.
  3. Slowly add broth and milk, stirring until smooth.
  4. Add broccoli and carrot, then simmer until tender.
  5. Blend partially for a creamy texture.
  6. Reduce heat and stir in cheese until melted.
  7. Season and serve warm.
